Anyway for fans that kept the faith, we now have whisky distilled in Byron Bay in large format barrels filled with new make at a lower abv and with some other tweaks to the program gained from trial and error that means there has been continual improvement up at Highwayman. Also Dan is not a timid soul and likes to tinker but now alchemy is taking place with interesting, fun and tasty whisky being made - personally I believe this a peated stout cask finish and the previous Highwayman release I stocked have been the best two releases yet and with the larger format casks its easier to get bottles now - initially the hype was created by the man and the story - now its fading but the whisky itself is now becoming worthy of the hype and there is more of it to drink which can only be a good thing. (The draff left over from the mashing is mixed with the evaporated pot ale and makes a nutritious animal feed for the local farm). If you ask any distillery that ferments in wooden washbacks what style of washbacks are best, they will tell you wooden ones are best. If you ask a distillery using stainless steel washbacks the same question, they will tell you stainless steel is best. At Ardnamurchan they've opted to use both styles: four wooden ones, two made from oak and two from Oregon pine, and three made from stainless steel. Distilled using traditional copper stills, the wash still holds 10,000 liters and the spirit still, which has a neck with a boil ball for extra reflux, holds 6,000 litres. To turn the spirit vapour into liquid, a standard shell and tube condenser is used, unusually located outside the building. New make spirit is cut at around 75% ABV to 63% using water from the Glenmore Spring before filling the casks... Nose: it’s a leaner and straighter one, less of a fruit bomb than some other Glenugies. This one is rather all on straw, chalk, hay, minerals, wee coastal touches such as crushed shells and beach pebbles. Wet seaweed, swimming pools, sandalwood, cement and bath bombs. Some dried lavender, white flowers, ink and a soft, waxy hessian quality. Extremely pure, fresh and fragrant. With water: develops towards sunflower oil, toasted seeds, breads, sourdough - a good blanc du blanc Champagne. Mouth: limestone, putty, white pepper, beach sand, lemon jelly, lamp oil, mineral salts, waxed canvas and pear eau de vie. A really eloquent coastal theme running through this one. Hints of miso broth with dried seaweed, olive tapenade, dried rosemary, lanolin and carbolic soap. With water: a tad fruitier with tangerine, melon and apricot. Some cut green apple, more hay and straw notes and that nibble of white pepper is back. Finish: long, citric, precise and extremely fresh. Also rather mineral and chalky. Comments: Even stripped of much of its usual fruitiness, Glenugie is still such an impressive distillate. Purity and precision being the watchwords here.
