Stellar selection by Whisky and Alement and Hidden Spirits. This dram takes you on a journey of flavours both bold and subtle. 12 years in a 1st fill sherry cask and finished for a year in an ex Caol Ila cask creating multiple layers of subtle peaty and smoky complexity of both the heather highland peat variety of the distillate to the coastal Islay peat imparted from the cask. Big flavours and mouth feel- black forest gateau and a cuban cigar on a leather chesterfield sofa. There is also some maple syrup and biltong notes but overall the whisky is not overly sweet as the layers of peat, smoked meats, mint and heather add savoury notes that balance everything out. Great chewy lingering mouth-watering texture too - neighhhhhh Unicorn!
In classic Australian style, this whisky has absolutely rippled flavour out of its cask. However, while I was expecting spiky youth in the spirit and the abv, it drinks with a maturity and ease that belies these facts. I have since bought two bottles. Absolutely delicious and as good, if not better, than it’s Scotch peers
