Nice pun on the thrash metal Pantera album - Vulgar Display of Power. This the most heavily peated Highwayman yet - matured in a French Oak Apera cask. There hasn't been much messing around with this - just a single cask, no elaborate finishes - heavy peat. This is Dan Woolley's personal favourite out of the whiskies he's made so far. I sense there is a slight lessening of the hype around new Highwayman releases recently as the volume increases so there is less FOMO - but I feel things are getting more consistent and tastier up in Byron Bay.
Official Tasting Notes
Nose
Smoked dried apricots, prosciutto and salted chocolate ganache with touches of orange chocolate Jaffa. Fennel seed and cumin earthy spices with flashes of soft mandarin oil with wafting peat smoke throughout.
Palate
Mixed citrus oils infused with heavy smoke and salt. A mid palate of creamy ocean drenched oysters smoked over burning seaweed with medicinal notes making appearances. Long and savoury saltiness finish with crescendos of peat smoke.
