Paul John 8y/o Christmas Cask 2025 Cream Sherry Cask 46%ABV

This is the oldest Paul John ever released - whisky matures rapidly in Goa and the Angels Share is around 8% per year. This whisky was aged in 36 x 250 litre bourbon casks for 5 years where it lost around 40% of the liquid and then disgorged and moved to fill larger cream sherry casks for 3 years. Some greedy Angels took a lot of this whisky as 6254 bottles were produced - if a whisky was matured in the colder Scottish climate the same amount of distillate would produce around 11300 bottles after 8 years. However 8 years in Goa ages the whisky much faster and the angels in Scotland would take over 30 years to take half the whisky.

The Paul John Christmas Edition 2025 with a deep amber hue offers rich, inviting aromas that lead to a palate layered with flavor’s of fruit, caramel and roasted nuts with a long, elegant finish.

Tasting Notes:

Colour: Deep amber with glimmers of crimson gold.

Aroma: Ripe plum, dark cherry, candied orange peel, and orange blossom honey, complemented by soft toffee, cocoa, and nutmeg.

Palate: A refined balance of apple, stone fruits, caramel, roasted nuts, and tropical sweetness, enhanced by notes of spiced rum, butterscotch, and dark caramel.

Finish: Long and creamy, with lingering tones of sweet oak, molasses, dried berries, and a subtle hint of Christmas cake – a fitting tribute to the season’s spirit.
