Starward Small Batch Yeast Trial Series D-53 52%ABV 30ml

An exclusive for 'The Drop' an invitation only quarterly subscription for the biggest Starward fans. This first exclusive is a yeast trial of D-53 a new yeast strain developed by Fermentis to create faster fermentation and yield at higher temperatures and to create esters that create fruity new make spirit from grain. This yeast was developed for the whisky boom just as the boom was coming to an end. This yeast makes delicious new make spirit that is very drinkable - peach, apples and pears and tropical flavours - banana, mango.

With many new single malt distilleries opening many struggle with cash-flow as they have to wait for the whisky to be ready - this yeast variety was developed so the 'White Dog'/Moonshine/ New make single malt spirit is itself marketable as a tasty spirit and after the minimum 3 years in a barrel its a nice fruity whisky. 

Carlie Dyer the head distiller and blender just looked at the instructions and must have  thought - if this new yeast ferments faster and more consistently and makes spirit that is drinkable in less than 2 years - What happens if you have longer fermentation and leave it for 6 years. Will something developed to make good whisky faster make great whisky if given a lot more time. This bottling is the outcome and we are the guinea pigs, There have been several trials of different yeast so the Drop will be great for whisky nerds to try whiskies that use different varieties an see how much yeast variety impacts the flavour of whisky.
