Our oldest whisky to date…

A beautiful marriage of mostly French Oak ex-Apera Sherry casks balanced perfectly with American Oak ex-Bourbon casks to showcase our maritime environment while letting our spirit shine through.

Light yet complex and sweet but balanced.  Notes of buttered fruit & golden syrup with a mineral, maritime character.

Only 619 bottles in the entire release, bottled at a decadent 52% ABV.

Made with two of our very first casks, cask #4 and #13, and matured right here on the edge of the Tasmanian ocean for over 6 years.

Nose
Red apple, apricot, almond husk, pear with a slight sea spray and woody character.

Palate
Apricot, apple and pear in syrup, buttery and biscuit notes, salted caramel with an undertone of golden syrup, balanced by citrus and a lovely oak spice.

Finish
A bitter sweet balance between fruited syrup and kitchen spices.
